Pansoti pasta

Ingredients:

Flour (the one for pasta,not for cakes) 1 Kg
Eggs 2
Water
Salt
Extra virgin oil

Direction:

Prepare the pasta with all ingredients and let it rest for an hour
Stretch the pasta with the pasta machine
Prepare square sheets about 5÷6 x5÷6 eachone
Place in the centre the stuffing (one coffee spoon…not the littlest not the big spoon)
Bend in corner direction….close two corners together
Then close again the other two corners as Tortellini shape
Cook in salty water for about 5÷6 minutes…5÷6minutes of boiling water…visually check …the pasta must be soft and not to much cooking,to prevent the opening of the pansoti…
Place the pansoti in a glass or ceramic table dish and add the sauce on..mix the pansoti and the sauce…
Sometimes when we put the sauce on cooked pansoti, we add a few hot water from the pansoti boiled water, if the sauce is too dense
